They don't have to take the wheel off but the job is so much easire. Spot on with the rest of your observations, spindled, there is usually a mark on there and yes they should be able to put it back straight. Just drive it a bit and get it right in your head where you see it sitting when you describe it to them, so they don't get it wrong again!

Thanks Sanjeevm. I'll take it back to them and see what they say. Just occured to me though, I also asked them to check for a knocking noise when steering on full lock. They came back saying it was normal, nothing to worry about. But in the process of checking the steering, could they have knocked out the alignment? How rough/thorough do they need to be when just checking something?

Never that rough to make the steering geometry knock out of place, it's very strong. If you try to have the wheel dead straight and the car steers off the the left or right or you adjust to go straight but the steering wheel is off then they must have put it on wrong. Nothing major but a silly mistake and a pita for you to have to revisit...
