Update: drove back home. Got about 400 miles in and it came back on. Got home, popped in the second bottle of seafoam. Also pulled the o2 sensors to switch them and see if it was a bad o2 if the code followed it. While they were out, I sprayed them off with some carb cleaner.
I drove about a mile since switching them, light still on. I got my code reader out, went to start the car to check it out and the code cleared itself before I could plug the code reader in. I have put another couple hundred miles on it and it's all good. Maybe just a dirty o2 sensor and/or the seafoam cleared out the injectors around the same time.

To chase the oil, you are going to have to get under it and take the armor off. If it isn't smoking it off at the exhaust manifolds, and it isn't leaking, it is eating it. This is normal, particularly doing highway speeds.

Oil is likely completely unrelated to SES unless a failed CCV is allowing too much oil back into the manifold. Pull the manifold adjustment valve (two star bolts in the side of the plastic manifold), look at it and the runners to see how much oil you have in there.
