Oil Temperature High

All,

I have an 05 4.8is and never saw the oil temperature going slightly higher than the middle (210 F), but last week it was right between 210 and 300 F , in the past even if oil temp went up the coolant temp always stayed in the middle, however this time that went higher too.

I went home and added some coolant as it seemed low, since then i have been reluctant to drive the X5 for longer distances, is there anything i can check to see whats could have caused this? at the time I was parked with AC on and engine running.
