Stripped both bolts on the rear caliber of E53

Please put jack stands on the rear jack points.

That's what I did. I placed one jack stand under the rear jack point on the driver side. I also use a jack lift to lift up the rear of the car from the sub frame area as a backup. It is slightly engaged so most of the downward force remain on the jack stand.

Maybe I need to use a jack stand on the rear passenger side as well?

I would put jack stands on both sides.
