agreed, use zerex dex or any phosphate free antifreeze,
That tidbit about the water was part of the explanation of what phosphates actually are. You can buy 100% antifreeze or 50/50 prediluted, and if...... Argh, nevermind, this has gone on far too long, everyone gets the point

You can do a valley pan gasket yourself in a day or so, doing the valve cover gaskets while you're at it. If your into performance mods, you could also swap on a pre-VANOS intake manifold (M62 3.5, 4.0 and 4.4) for under a hundred dollars from a junkyard, get $$Dinan$$ software for $300 and have an extra like 15hp.There are write-ups for the valleypan gaskets on e38.org BMW 7-series information and links

Old news on the 5/7 boards. It's actually the EXACT same intake manifold $$Dinan$$ sells for like $2000. It's a simple bolt on item, then just get the necessary software to optimize it. It takes a little more effort, but you can also swap the MAF tube to the 3.5 high flow meter from the pre-VANOS unit also...remove the round plugged sensor and throw it away, then just swap your flat plugged sensor into the MAF tube. You guys are drive-by-wire, so you'll still have to goto $$Dinan$$ if you wanna go that far.
