oil question - some white smoke and thick burning engine oil smell inside car

can any body help me out? do i need to use mobil 1: 5-30, 0-20, 0-30 or 0-40? i live in texas. when i bought the car there was no smoke smell but everytime i would crank the car when cold it would knock. it no longer knocks with 0-40 but it smells terrible when at running temperature.
