If using a good synthetic oil and changing frequently and hot you shouldn't have any sludge buildup to need to use sea foam.

Ricky the dealership had changed the oil (or claimed to) when I bought it 5500 miles ago. I have Mobil 1 0w-40 European to replace it with. My worry is whomever owned before me did the 15k oil change and I want it to last another 100k.

Doing 15,000 mile oil changes wouldn't have been a problem; short trips and never warming it up completely would be much more worth worrying about.
Seafoam and similar solvent type cleaners can be very harsh on seals and plastic parts. Not recommended.

I did it to my X once when I got her due to shady dealer/recent trade-in. Added seafoam and drove around for 20 min and changed the oil hot. Have had no problems. When I changed the VCG, the crankcase looked nice and clean.

I would do short OCI for the next few oil changes if you are worried about it. Using a high quality synthetic or something like Rotella t6.

I use Rotella T6 year round it's a fantastic oil with plenty of detergents since many diesel owners use it.
I'd recommend doing a few short hot oil changes with T6 if you want to "clean her out a bit", I change mine every 5k or once a year whatever comes first, with T6 and an oem filter
