I will be doing this job on my N62 next spring.
Every video I've seen says that the valve covers are hard to remove, and some show some of the spark plug tubes stuck to the valve cover and coming off with the valve cover (they release from the bottom of the spark plug well). One video showed the guy wiggling the valve cover a lot to unset the tubes. If it were me (and it will be soon), I'd persist with the wiggling and prying until they come out. And I would consider replacing the tubes, as the seals like everything else made of rubber in this engine are likely to be hard as a rock.
Stay as patient as you can be - valve covers are expensive.
Coming from working on BMW's inline 6's, the V8's seem way more difficult in every respect. Twice as many of everything, a boatload of stuff to remove to get to anything, and very little room to work.
