I'd rather have air suspension because I tow my other car with my x5 fairly regularly.

Not Correct. The Air Bags are real Air Suspension system taking advantage of the Compressibility nature of Air as Gas. And because of this, the pressure in the system can be controlled to achieve a variety of ride quality and height, self-leveling.

At least, the one I have in my Bimmer functions solely on its own as a complete Air Suspension system and not just a mickey mouse attachment at the end of any steel coil.

I just thought of something....

Wouldn't a 'fake' air spring- say something fabbed out of delrin, with the same shape as the spring, be a 'air bag conversion kit'????

If the airbag is simply a static 'spacer' (not a dynamic spring components) you should be able to replace it with a fixed spacer.

Avoids buying new BMW part$$$.

The Air Spring suspension system is NOT fake. If you did this, you will surely be riding on your solid Chassis as the only shock absorbing system you will have now would be just your Tires.

If that were the case, yes of course, but it is not. I suppose you know that already.
