Redhorese,
Your question has come up before and it took some serious digging
to find the solution, (see four page thread linked; worth a read.)

The 4.8 capacity seems to be pretty well nailed down at 8.5 qts;
the 3.0 capacity less so, though I would bet it takes the 7.9/8.0
qts that all the X5 3.0 engines have taken throughout the series.

And, you are correct: in the E70 "manual" written with Biff&Buffy in
mind, there is no oil fill capacity. My E53 3.0 has always taken 8 qts
after a long drain; imo, your E70 3.0 will too.

PS/Edit...if you remain unsure/unconvinced I would hope one of the genius techs at your local stlr,
has the answer; maybe not the "SA", but a tech should be able to recite it off top of his head.

Attached is the official bulletin from BMW TIS stating the oil capacity. Indeed for the N52 & N54 motors, the capacity is 6,5 litres.

6.9 US qts is the factory spec. 7qts will do since you can't drain all the oil from the bottles anyway. My owner's manual tells me how much WWF it holds and gasoline, it tells nothing about oil amount.

Annual oil change

BMW will change your oil and filter, annually, at no charge if you haven't reached 12,000 miles a year.
