I talked with a couple different BMW service advisors, and an independent Mercedes mechanic. All three were against these, saying they had seen overheating of the brakes.

Not just overheating when using the brakes, but a hot soak (after you stop) can lead to pad deposition on the rotor, resulting in a pulsating pedal that feels similar to a warped rotor.

Is it true that if you wash your wheels to much with water, than the roter can get warped or damaged?

Not sure what you mean by "to much with water" but the answer
is NO.

I rephrased your question, think this is what you meant. If the brake rotors are very hot (after a long downhill, for example) then spraying water on them directly can warp them. Not likely, but possible.
