Since Turkey was brought up:
What was your best turkey or turkey day ever?

I'll start.
The weirdest was the best. I wanted to do somethng completely different.
Boned out the bird. Made cornbread/giblet stuffing but added lobster. Made a gravy, but like a bisque.

An organic Norfolk Black turkey, purchased and cooked in the West Midlands, on a Weber BBQ brought over to the UK. No rotisserie, just straight on the grill with indirect heat. Christmas dinner, several years ago. No stuffing in the bird, but a fennel and sun-dried tomato stuffing prepared and cooked in the oven. Brussel sprouts, sauted with pancetta. Can't remember the rest of the meal.

Last year. A 22 lb'er from a local farm, brined overnight in a secret concoction. Secret because I forgot what was in it and I'll never be able to recreate it.:( Various side dishes which I've also forgotten. So what was so memorable? The amazing congee made with the left over carcase the next day.

My uncle getting really drunk and adding crab boil spices to the pot before boiling (deep frying) the turkey.... interesting but GOOD.

I think that over roasted is still the best, deep fry is fine but it just not a Thanksgiving turkey

I'm with Ray...our best turkeys are brined for ~24hrs by the Boss.
Then V adds some special spices inside and out, from Penzey's
Spices where she's been getting her supply for 25 years.

Can't recall the "best" turkey, as we do them a few times per year;

I do recall the first one we did together: fall of '86, just moved into
a new house we GC'd and built together. Put the turkey on the brand new
Weber, started drinking wine and watching F Ball. The combo of euphoria
over our new house, 4+ hrs of drinking wine, etc. = "$#*+ faced" by
dinner time. We learned...:rofl:

The best turkey is deep fried, seasoned with Garlic butter flavor injector by Tony Chachere. Shoot it right into the meat 24 hrs before frying. The juciest bird you've ever tasted.

Since last Thanksgiving, my folks have requested a Turducken. Last year is was a sausage stuffed one. It was pretty good! This year I sent two to them in Cali, one stuffed with dirty rice, the other with a crawfish stuffing.
