That's really cool. In my case I popped the question early in the evening before a very nice dinner....your fiancee may not eat for 24 hours afterward, so if a nice NYC dinner is planned and you want her to eat...

Idea...
I can only think of the typical ideas for proposing in NYC. Times Square, Central Park, Empire State Building.
Or how about take her to dinner at Tavern on the Green and propose there. Tavern on the Green is a nice restaurant in Central Park. There should be a website for it. Or you could do it in a carriage ride thru Central Park on the way to the Restaurant. Just an idea...whatever you decide good luck...

where ever you go, call ahead, and have them bake you a special cake with 'Will you marry me?' on it. Make sure the waiter/manager knows whats going on so they'll be no screw ups.
if they can't bake you a special cake, have them bring out some other dessert she likes on a large plate where the chef can write 'will you marry me?' on the plate around the dessert. its sorta cheesy, but it worked for me

Congrats...
I was under the same dilema and finally stopped thinking too much about it and I just took her to a nice dinner (Top of the Hub) we both had a good time and afterwards we went to Mohegan Sun for celebrating.... Good luck w/ whatever you decide to do.
