I think the best thing to do is to transfer the actual trim to the old seat and be done with it.

Yeah well this is part of the airbag plug obviously, but since the 07 car does not have a plug to connect to this, not sure if these seats can be retrofited at all.

As for checking the wiring...

02/2007 X5, swaped seats but...

Got seats from a 2008 X5 in the 2007 one, but the plugs are different, at least there is a small yellow one with a few pins (not the large usual one) that plugs to nothing > this is on the passenger...
