Update: drove back home. Got about 400 miles in and it came back on. Got home, popped in the second bottle of seafoam. Also pulled the o2 sensors to switch them and see if it was a bad o2 if the code followed it. While they were out, I sprayed them off with some carb cleaner.
I drove about a mile since switching them, light still on. I got my code reader out, went to start the car to check it out and the code cleared itself before I could plug the code reader in. I have put another couple hundred miles on it and it's all good. Maybe just a dirty o2 sensor and/or the seafoam cleared out the injectors around the same time.

To chase the oil, you are going to have to get under it and take the armor off. If it isn't smoking it off at the exhaust manifolds, and it isn't leaking, it is eating it. This is normal, particularly doing highway speeds.

Oil is likely completely unrelated to SES unless a failed CCV is allowing too much oil back into the manifold. Pull the manifold adjustment valve (two star bolts in the side of the plastic manifold), look at it and the runners to see how much oil you have in there.

The oil issie I already figured out. It was my fault. Infilled it on an incline to full and checked it on a flat surface. I didn't account the incline. Filled it back up and i hasn't moved since.
The SES is gone now too. Happened after I ran the second bottle of seafoam and cleaned the o2 sensors. It may have even been a slightly bad connection on the wiring of the o2 connectors that got a good contsct after switching them.

Just an update on this.

The code did come back. The vehicle stalled out and went to limp mode with a SES light. This went away after it got restarted. Also, the smell of burning oil was pretty heavy. I decided to fix the oil issue as it seemed to be the most dire and probably related.
I ordered a new valve cover gasket set and OEM spark plugs. The old gaskets were dry, cracked, and brittle. There was oil in the plugs, fouling them up (this would explain the temporary seafoam fix). After buttoning everything up, it ran beautifully. I felt like there was an uptick in power and response, the oil smell went away, the code disappeared and I haven't seen it since for over 4k miles.

Until today...

We just got back from another 1,000 mile road trip. No issues or hiccups along the way. The day after, just driving in town and SES comes on. I pull up torque on my Eonon unit as it does and run a fault code check. It's back, P1093.

I reset the code to see if it was just a hiccup. But I plan on pulling the plugs to check. Maybe some oil happened to find its way in there again.

Also, with a ccv issue, will I be good to fill it up with oil, keep an eye on it, and fix it when I get back home? I have about 1k miles to go before I get home. If not, how much of an intensive repair is it? Something I can do on the road, away from my garage?
That is not good poor oil quality

This was prioe to tearing off the valve cover and doing the gasket. It is in a much better state now. Also from looking under the valve cover, what was on the oil cap looked like build uo that was never wiped off since day 1. The head looked clean and well oiled.
