I believe its the vent on the left where the fan is but where is the temp sensor at?

That's the right version of the vent. So I'm sure it's directly below the left seat temp arrow buttons.

I swapped the faces on the IHKA so a new temp sensor and this morning it still did the same thing, got cold on the highway and then when I got off it went back to warm. Could the faster speed be pushing a door open allowing cold air to flow through the vents?

I think purplecty hit it with the heater control valve. Common culprit for too much heat (or too little). I'm guessing yours is partially blocked by the rubber seals that disintegrate around the plungers. Not enough flow through the heater core and so at speed the air can't be heated enough.
These heater control valves are only good for ~120,000 miles. Take yours off, open it up and have a look. Very easy job to remove other than opening the cooling system. I've rebuilt one in an e36 but buying a new one is preferable (to me). Here's a video on the issue.

Yea, all of the vents get cold so I will try a new heater valve.

Do you have a scanner that will read real-time value of heater cores? That will confirm stuck closed heater valve. It's very strange that you'd get both sides cold. Usually just one side fails at a time.

Can confirm. It happens. Usually in a car driven mostly without passengers. Passenger side valve will fall but go unnoticed by driver until that side fails.
My failure was both sides. But mine failed open so even when ac was on hot air would emanate from the center console area. That's on an e36 with dual climate though, not e53. Andrew is right though. Further diagnosis could confirm the failure before actual removal. At certain mileages though I like to shotgun parts to establish a baseline for systems. Alpine, you didn't say your mileage (or I missed it) but I'm guessing the valve is due for replacement
