What part is falling down/peeling? The sunroof panels do not need to be pulled to get the headliner out....unless you're doing those as well.
$500 isn't actually all that bad if that's the whole job....and if you're recovering the sunroof shades, $500 is actually quite reasonable. It's fairly easy to tip $100 for glue and GOOD MATERIAL. If you want a recover job that's going to look good and last, it take's time to strip the old material and properly prep the headliner for the new stuff....I know because I've done it on mine. Maybe consider removing/installing the headliner yourself to cut down some of the labor costs. I did a how-to: headliner removal thread a while back....perhaps give that a read.
