Cat5 will be ok for data, but not very good for audio as the shielding is not good enough for audio applications, this could be the problem, it's not man enough for the job.
I'd recommend usisng at least a 16 strand wire gauge (like a half decent speaker cable) for this main part of the loom, crimps and solder should be fine, remember to heatshrink the joints also.
When I make up a lead or loom, I always use at least a 16 strand wire gauge for data and audio (audio, i-bus, mute and tel-on), and a 20 or 22 strand wire for power and GND, I always solder and heatshrink.
