I don't know what to tell you, but the migration from windows to mac might not be as painful as you think (but it will be expensive!).

I have Parallels and it is fantastic! I used to run a PC next to my MacPro, but no more. One box does Windows and OSX!

I know you can run 2 lcd's with Windows XP if you have the correct video cards. Not sure about more than that
