You're welcome. Let us know how it goes!

I have noticed that alot of people completely forget to use common sense when cooking. Burnt don't mean Cajun! Also, people tend to alter a recipe before they have even tried it, then wonder why it sucks. Just relax.

The single best book a layman can read is Madeleine Kamman's 'The Making of a Cook' It is the single most concise, complete and prefessional book printed. It not only covers the recipes but the mechanics and molecular science on how things work/behave.

Rule 1. Always do the mis-en-place. That means get the items measured, cut and together before starting. Includes equipment.
Rule 2. Read through and comprehend the steps and results, then start.
Rule 3. Baking is a science. Don't go fudging around with baking recipes.
Rule 4. Season as you go.
Rule 5. Common sense. Your not building a Rocket. It's just food.

If you have a specific need, just ask. I'll try to help.

My experience shows that if your lady sees you pulling a Chocolate (anything) Souffle out of the oven, it's a done deal.

You're from Metry or N.O.? I'm partial to Louisiana Fish Fry Jambalaya Mix.

Now if I can only decide on a fried turkey or turducken for Thanksiving...

And yes I'm actually from Metairie. As good as turducken is, it's hard to go wrong with that juicy, tender fried turkey! My old neighbor would set up his 14 boiling pots on the side of his house and sell assloads of fried turkeys over the holidays, which smelled up the whole neighborhood.... damn I miss that! And he would inject them the night before with plenty or spices and let that really soak in before dropping them in... just bursting with flavor!

Not that anyone is keeping track/cares, but I had a pack of peanut butter
crackers, a banana, an apple and 3 cups of aqua on the Golf'emUp course
today. Great lunch... ...

Weasel: I used to get to NO about 4-5 times per year from '75 to '82,
back in the crazy days. I spent alot of time out in Houma and Morgan City
with the pipe boyz, too. My local rep that worked for me was a raised in
NO/lived in Kenner guy and knew the area pretty well. I always enjoyed
the resturants and joints, esp on the ol'Expense Account.
