Horseradish ice cream
I took a customer to Felidia's for dinner last night. One of the desserts was an apple crepe thingy with horseradish ice cream. It sounded a bit too strange for my tastes but my customer ordered it. I DID taste it. Amazingly, it was good. Very odd though, you could taste the horseradish, but without the bite.Carry on.

It was good. Don't get me wrong, I wouldn't eat a bowl of it, but the flavors complimented each other nicely.

hmmmm
1st question: L, What were you wearing? 2nd question, why does that sound too strange? What can make food interesting is the removal of Dogmatic ideals and working with complimentary flavors or contrasting flavors. These items that reach out need to have the flavors managed well. My favorite ice cream to make (has been for 15 years) is Saffron. Even Rosewater is incredible. We used to make spicy peanut sorbets etc... Horseradish can have the heat removed and retain the flavor. Then sweetening it is not that crazy. Some fantastic combinations: Mango and green peppercorns Rosemary and pears Bay leaves as a sweet item are terrific Bacon is being used alot, candied as a compliment in desserts and it can work well Cumin also accents sweet items well Carry on. oh and apple, crepey thingys with horseradish sounds feasible. The horseradish would play the contrast, kinda sour/tart against the sweetness and rounded flavor of the apples.
Similar to sour cream. Now who hasn't had a jalapeno jam? or a sweet garlic jam? some kinda hot pepper jam. Think of caribean jerks. Famous for combining savory, hot and sweet. Last edited by realchef; 04-09-2009 at 10:07 AM. |
