IIRC, you need to have a right software to code the BC display inorder to turn off one of the Cons.
As I see it, running the car with low fuel in the tank is not good for your fuel pump and filter. All the stuffs at the bottom of the tank get suck up by the pump and might clog up your filter. You are also having the risk of frying your pump if the gas get way too low in the tank.

The fuel in the tank also cools the pump. Not sure if it being low, would do any harm. Probably the idea is to not pick up crud from the bottom of tank. Honestly, the last modern tank I looked into, was surprisingly clean.
As far as obc functions, I am pretty sure I can choose whatever I want from the navigation. I can turn on and off all the different choices.

Running around with low fuel in the tank will shorten the life of the pump. As for debris; I would really worry about it, fuel these days is pretty clean from major fuel chains.

A tip? Deselect all of them and then select them in the order you want to scroll through. Want to see date first, then time? Select in that order with either (NAV or non-NAV) radio controls and it will display in that order.

First, read the owners manual. There are many online editions. Second, it's pretty easy to figure out once you're at the radio. Try it.

Also in the manual. They are separate consumption levels based on when they were set to zero. For instance, you may wish to set cons1 for your longer term/consistent mileage and never reset it. You could set cons2 while towing or during a long trip to see what the consumption looks like for that snip of time.
