Forgot to ask how old the code is
He said he did full readaptation process, and this can only be done when there are no misfire codes
Car does feel smoother and even gear changes seem better.

A thermostat that is always open will cool the water so that the engine may never get up to the designed operating temp. What does the temp gauge on the dash say?

A cold engine always require a richer mixture. You may want to get that fix ASAP.

I assume he cleared the code. If not, I would have it cleared and then drive it far enough, or let it sit running long enough to get the engine easily to operating temperature and to the point the thermostat should have opened and closed a few times. Then check to see if the code is back. I can't recall for sure but it seems like a bad temperature sensor will cause a code, if it does I don't remember how it reads. Either way, as upallnight posts, you should get it fixed right away if the temp is not normal, measured other than by the dash needle.

Thanks for pointing this out
I will check tomorrow. One thing I know is the oil temp never gets to the middle of the gauge (100), it stays about 90 Celsius - is that acceptable?

The needle should be in the middle at operating temperature. In some conditions, it could be a little higher. Very much under the center is not an operating temperature norm, the same for much past the center. Most gauges are normal when they are the center point so it is easy to scan the dash to check temperatures.

Update:
Water temperature is normal, needle is staying in the middle of the gauge
Oil temperature, the needle is just under the middle of the gauge
Car is running fine so far
One thing to note is that the last place I took the car to (the one that did the diagnostics), they put the 3 old coils (which I had saved) back into cylinders 5,6 and 8, and it turns out they were fine
So the first garage who tested the coils and told me coils 5,6 and 8 were faulty (due to misfire codes for 5,6 and 8), wasn't exactly being honest with me

Did they test each coil or did they go from the fault codes? Fault codes would have mislead them.

Seeing that they only replace the three coils base on the DTC and not all of the coils I would say they didn't test the coils.
