I'm with Ray...our best turkeys are brined for ~24hrs by the Boss.
Then V adds some special spices inside and out, from Penzey's Spices where she's been getting her supply for 25 years. Can't recall the "best" turkey, as we do them a few times per year; I do recall the first one we did together: fall of '86, just moved into a new house we GC'd and built together. Put the turkey on the brand new Weber, started drinking wine and watching F Ball. The combo of euphoria over our new house, 4+ hrs of drinking wine, etc. = "$#*+ faced" by dinner time. We learned...
