Well… Headers, and no cats for starters. But, the situation at the moment is, do you have emissions testing? And if so, when is the next test due? For now you can straight pipe those cat deletes. If you have a police report, photos, etc., then I don’t see state police citing you (Just a Guess) for the time being. Ultimately, it all depends on your state’s requirement. If you are regulated, in my opinion, high flow cats would be the way to go. Buy 2, have your local exhaust shop weld them in, problem solved. MAKE SURE, they are high quality cats! You don’t want an SES warning.

Summit Racing has Magna flow Catalytic converters.
Not sure if your state will allow them... We've used Magnaflow products on various custom projects. The last one was putting a 1UZ motor in a 1993 4 Runner. Sound is great.

My experience with Magnaflow cats is that they are good for about one emissions test. By the time the next one comes around, they're trash. I do not recommend.

Man, I hate it for you!
You may want to look into HJS cats, made in Germany and best of best. I've used them on my M5, 540 and have them on my 532M now. Pricey, but much less than OEM BMW. If you're interested, PM me and I'll look it up for you. I had to order them from Germany and I have some reputable sources I'll be glad to share with you.

I have had similar experiences and it really does suck when you realize it’s not a dream

I have look for cats for my car on Amazon and if I found one with a good enough review that would fit in my car I will definitely consider a third-party option option

The other option if you can find someone parting one out is to pick up a set of used manifolds. Probably the cheapest option, but much harder with the current inflated value of cats. (Also not entirely legal. You're not supposed to install used cats for reason that don't really make sense compared to most of the new aftermarket options.)
