Did you give any thought to replacing the manual “plunger” with an appropriate air tight cap and potentially adding an air compressor “nipple” with a regulator? I’m wondering if it would help avoid bleed down and pressure lose when you’re under the car and not able to pump it back up?

No, and let me tell you why
I will never put brake fluid in the pressure vessel so I will ALWAYS check the brake fluid reservoir After each caliper bleed (or more often) just to ensure my reservoir is full anyhow, so I have to be by the pressure vessel anyhow so I will release pressure from the vessel, via the yellow turn knob, and then check fluid level and repressurize.
So pressure bleed off is not of concern to me, and in some ways a safety check so I do NOT accidentally pump air into the system.
